Scientists at the VTT Technical Research Centre of Finland recently produced their first batch of cell-based coffee.
Researchers used cellular agriculture, they placed coffee cell culture in the bioreactor, which is filled with a nutrient-rich medium, where the plant cells proliferate and grow biomas.
The team of scientists developed a roasting process and then produced its first batch of cell-based coffee.
Cups of cellular coffee probably could not pass standard taste tests just yet, but had lots of potential for a multi-billion-dollar global industry. VTT’s team says that the final product has passed the taste and smell test in an evaluation by the institute’s trained sensory panel.
In Europe, lab-grown coffee would need to be approved as «Novel Food» before being marketed.
